Keys-Bob and Barb “On The Road Again”-“Stopping to Enjoy the Seafood & Palm Tree studded shorelines during sun-up and sunset!  We are at the wonderful Pilot House again, but not since leaving the Keys in early 2000. The Keys is always making history, recently the Net Flix people have continued to shoot “Bloodlines” with a show that depicted scenes at the Pilot House.  Everyday you can find fresh seafood on a beautiful day with fish swimming under feet, the actual deck is designed with glass inserts so that you can actually watch Snapper and other fish Barracuda swim Beneath Your Feet through the glass floor boats all manner of boats are everywhere somewhere running propellers air air propellers were those things called in we’re out on the veranda and the pilot house is that just a marina in a restaurant but it has just about everything you could want if you were fishing if you are driving if you are looking for seafood in the finest kind. Lobster mac and cheese tender chunks of Maine Lobster in three cheese lobster cream sauce tossed with penne pasta and topped with truffles bread crumbs also Pilot House also Pilot House style Paella bake with baby clams, mussels, shrimp, Lobster Charizo sausage, roasted red peppers, peas and rice.Also decorating our waterfront table was Macadamia crusted Hogfish as seen on Diners Drive-Ins and Dives on the Food Network. This delicate white fleshed fish with Crisp, Citrus Macadamia Panko crust, nested in  mango pineapple salsa was extra special even for those that don’t normally order fish. For table drinks we had a Pina Colada, and a Corona inserted bottle into a Margarita. Never had this before, but will have it again. You can eat inside under AC, but many visitors and diners love the glass floor where you can watch wild tropical fish swim beneath your feet while you can even feed them off the table. They have 18-large TV’s, and this place really rocks if you like, with live entertainment  most nights. So what to do when you reach that day when your wedding anniversary rolls around? Well, you go out to a friendly, great food restaurant, eat and chat with fellow diners and have at least one beer!  That’s what we did yesterday, we went to the Pour House. Barb had cod, I had a shrimp Pour Boy sandwich and our friends the Limoges had the same. Sitting near us on benches for chairs (to encourage that neighborly atmosphere of congeniality and talk) we met several couples, some from TN. a some from Louisiana and some from Gatlinburg all coming to Crossville to enjoy the all-you-can-eat crawfish boil. We tasted everyone else meals, we talked, ate and drank in a very friendly, happy atmosphere! It was our first time at the Pour House with very reasonable prices, and we are going back as much for the food as for the relaxed friendly atmosphere! Ask us about this great spot!

It is the centerpiece of springtime birthday parties, graduation celebrations and family gatherings and it is the culinary highlight for many visitors. To experience a crawfish boil is to experience everything that makes Louisiana a traveler’s delight: the authenticity of the culture, the joie de vivre, or joy of life, of the locals and the most delicious and exotic food to be found without crossing an ocean.

The history of crawfish intersects with Louisiana’s agriculture and religion, both integral parts of the state’s identity. Crawfish were first harvested from the deepwater of the Atchafalaya Basin and later became a farmed commodity when farmers turned their flooded rice fields into crawfish ponds to meet demand. The crustacean is the gastronomic anchor of the Lenten season during which Catholics abstain from meat on Fridays.

Crawfish season generally peaks in April but depending on weather, it can start as early as November and last through the following June. Restaurants across the state serve up the backyard boil experience. Crawfish is offered by the pound—three pounds is a good starting serving size—with the customary sides of corn on the cob, potatoes and maybe sausage or mushrooms which are boiled with the crawfish to soak up the flavor.

If you prefer your crawfish served with a side of music, check out the many crawfish festivals throughout the state—including the largest in Breaux Bridge, the Crawfish Capital of the World.
